This creamy homemade Low Carb Caesar Salad Dressing is one of my favourites — easy to make, full of flavour and versatile enough to use as a dip or a marinade. I’ve used this version for years and it consistently receives compliments from friends and family.

How to Make Low Carb Caesar Salad Dressing

  • Place all ingredients except the salt and pepper into a container suitable for an immersion blender or into a blender. A mason jar works well for an immersion blender.
  • Blend until smooth. Taste and adjust garlic and lemon juice as desired — I often add extra garlic for more punch.
  • Season with salt and freshly ground black pepper to taste. Many people find the anchovy paste and Worcestershire sauce provide enough saltiness on their own.
  • Transfer to a sealed container and refrigerate. The recipe yields about 1 cup of dressing and will keep for up to 7 days.

If you make a Caesar dressing that includes raw egg yolks, it should be consumed within a shorter time frame for safety. I don’t recommend freezing this dressing — freezing can change the texture and separate the emulsion.

Low Carb Caesar Salad Dressing

Creamy Low Carb Caesar Salad Dressing — egg-free, simple to make and great for salads, dipping and marinades.

Ingredients

  • 3/4 cup low carb mayonnaise
  • 1 tablespoon fresh pressed garlic (or one clove minced)
  • 2 1/2 teaspoons anchovy paste (optional)
  • 1 teaspoon Dijon-style mustard
  • 1/3 cup finely grated Parmesan cheese
  • 1 teaspoon Worcestershire sauce
  • 1–2 teaspoons lemon juice, to taste
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Combine the mayonnaise, garlic, anchovy paste (if using), mustard, Parmesan, Worcestershire sauce and lemon juice in a blender or a jar for an immersion blender.
  2. Blend until well combined and smooth. Taste and add more garlic or lemon if desired.
  3. Season with salt and pepper to taste. Keep in mind Parmesan, anchovy paste and Worcestershire sauce add saltiness, so you may need little or no additional salt.
  4. Store in a sealed container in the refrigerator. For best flavor, let it rest for a few hours before serving; this allows the flavors to meld.
