Super Bowl LVIII has come and gone, and for many viewers the biggest talking point wasn’t the final score or the halftime show but how often Taylor Swift appeared on screen. If you were watching for Swift, the frequent shots of her in the stands were a highlight; if you were watching strictly for the football, they were a distraction.

Taylor Swift’s presence has coincided with a noticeable shift in NFL audiences. The pop star’s public interest in the league has introduced many new viewers, particularly young women and girls, and has been credited with helping expand the NFL’s fan base beyond its traditional demographics.

Industry observers have dubbed this effect the “Swift bump.” Analysts point to measurable changes: sponsorship interest has reportedly risen by roughly 20 percent since her increased visibility around NFL events, while viewership among teenage girls has soared—reported as a 53 percent increase—and the 18–24 age bracket has grown by about 24 percent. Those shifts are significant for advertisers and the league, which are always seeking ways to broaden their audience.

NFL Commissioner Roger Goodell acknowledged the trend during a pregame news conference, noting that Swift’s attendance creates a new conversation about the league and attracts fans who might otherwise not tune in. “Obviously, it creates a buzz,” he said. “It creates another group of young fans, particularly young women, that are interested in seeing why is she going to this game, why is she interested in this game besides Travis. She is a football fan.”

“Obviously, it creates a buzz,” he said. “It creates another group of young fans, particularly young women, that are interested in seeing why is she going to this game, why is she interested in this game besides Travis. She is a football fan.”

The visibility of a high-profile celebrity at a major sporting event inevitably provokes strong reactions on social media. Some viewers embraced the attention, creating lighthearted drinking games and memes counting each camera cut to Swift. Others criticized the broadcast decisions, arguing that too many camera cuts to the stands interrupted the flow of game coverage and distracted from the on-field action.

That split reaction highlights a broader tension for live sports broadcasters: balancing human-interest elements that draw casual viewers with in-depth coverage that longtime fans expect. Celebrity shots can attract a new audience and generate additional sponsorship value, but they can also lead to complaints from viewers who want more focus on plays, strategy and commentary.

Not everyone is thrilled with the trend. Across social platforms and in opinion pieces, some fans have expressed fatigue at seeing Swift repeatedly highlighted during NFL broadcasts. Their critiques range from annoyance at perceived overexposure to concerns that focusing on celebrities detracts from the competitiveness and pacing of the sport itself.

Supporters of the increased coverage point out that sports leagues and networks are trying to grow audiences in a fragmented media landscape. When a global superstar draws attention, publishers and advertisers take notice. For the NFL, this can mean tapping new revenue streams and cultivating long-term fans who might start watching because of a celebrity and stay for the game.

So, exactly how many times was Taylor Swift shown during the Super Bowl?

Counting camera cuts and clear close-ups, Taylor Swift appeared on screen 13 times during Super Bowl LVIII. Viewers who were keeping track found themselves divided—some logged each appearance for fun, others used the tally as a barometer for how much the broadcast prioritized celebrity shots over the action on the field.

Whatever one’s take, the episode underscores how celebrity influence intersects with major sporting events. The “Swift bump” has tangible implications for audience demographics, sponsorship interest and broadcast strategy. Going forward, broadcasters and leagues will likely weigh these trade-offs carefully as they try to expand the fan base while keeping traditional viewers satisfied.

Ultimately, the conversation isn’t just about a single star or a single game; it’s about how live sports evolve in a media era shaped by celebrity culture, social media and changing viewer habits. For the NFL, the immediate benefit is clear: a surge in new attention and engagement. The longer-term challenge will be converting that attention into sustained interest in the sport itself.

Happy January! After the busy holiday season I like to return to recipes that are easy, comforting, and light. This roasted red pepper tomato soup is one of my go-to post-holiday meals: it’s vegan, quick to make, and full of roasted vegetable flavor.

The soup is naturally dairy-free, but if you aren’t strictly vegan a few grated Parmesan shavings or grilled cheese bites make a delicious finish. It reheats well and freezes nicely, so it’s a reliable option for lunches and simple dinners.

Kitchen Tools

Large pot

Baking sheet (cookie sheet)

Immersion blender or stand blender

Basic prep tools: knife, cutting board, stirring spoon

Ingredients

2 tablespoons olive oil

½ white onion, roughly chopped

2 sweet red peppers, seeded and quartered

1 pint grape tomatoes

2 (28 oz) cans whole peeled tomatoes

3 teaspoons red wine vinegar

8 cloves fresh garlic, peeled

Salt and pepper, to taste

1 teaspoon red pepper flakes (optional)

How To Make Roasted Red Pepper Tomato Soup

This soup is straightforward: roast the vegetables to concentrate flavor, combine with canned tomatoes, then blend until silky smooth. If you have a little extra time you can simmer the combined soup for deeper flavor, but it’s delicious straight after blending thanks to the roasting step.

Roast the Veggies

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Remove seeds and stems from red peppers and cut each pepper into large pieces. Roughly chop the onion; large chunks are fine since everything will be blended.

Place the peppers, grape tomatoes, chopped onion, and peeled garlic on the baking sheet. Drizzle with olive oil and season with salt, pepper, and red pepper flakes if using.

Roast on the center rack for about 20 minutes, until the vegetables are softened and nicely caramelized.

Complete the Soup

While the vegetables roast, pour the canned whole peeled tomatoes into a large pot. Add the red wine vinegar, cover, and let the tomatoes simmer gently to develop flavor.

When the roasted vegetables are ready, add them to the pot with the tomatoes and stir to combine. If you have time, simmer the combined mixture for 10–15 minutes to meld the flavors. This step is optional.

Use an immersion blender or transfer in batches to a stand blender and puree until the soup is smooth and free of lumps. Taste and adjust seasoning as needed. Serve warm.

Pairing Ideas

This roasted tomato soup pairs beautifully with a variety of sides. Try one of these:

Sandwiches — classic grilled cheese, roasted eggplant sandwich, or any hearty melt.

Salads — a crisp Caesar, spinach and apple, or a simple mixed greens salad.

Roasted vegetables — extra roasted broccoli, asparagus, or Brussels sprouts make a filling plate.

Bread bowl — serve the soup inside a hollowed round loaf for a fun presentation.

Topper Ideas

Toppings that complement the soup:

Grilled cheese bites (vegetarian)

Homemade croutons (vegan)

Fresh basil leaves (vegan)

Freshly grated Parmesan (vegetarian)

A spoonful of basil pesto (vegetarian)

Common Questions

How long does homemade soup last?

Stored in an airtight container, homemade roasted tomato soup keeps for 3–4 days in the refrigerator. It also freezes well for longer storage.

How should soup be reheated?

Reheat gently on the stovetop over low–medium heat for 5–10 minutes, stirring occasionally, or microwave in short bursts until hot throughout.

Can soup be frozen?

Yes. Transfer cooled soup into heavy-duty freezer bags, remove excess air, and freeze for 4–6 months. Defrost in the refrigerator overnight or submerge the sealed bag in cold water to speed thawing, then warm on the stove or in a slow cooker.

The Foundation of Flavor: Aromatics and Seasoning

Aromatics form the base of many great dishes. Classic building blocks—onions, garlic, carrots, celery, bell peppers and similar vegetables—release sugars and essential oils as they cook, creating a richly flavored foundation. Lightly sweating or gently browning these ingredients unlocks complex aromas that carry through the entire dish.

Seasoning is integral to layering flavor. Salt is the most important seasoning for bringing out other elements: it suppresses bitterness, enhances perceived sweetness, and helps aromas register more clearly. Learning to season in stages—seasoning as you cook and adjusting at the end—lets you build a balanced profile. Consider the basic tastes—sweet, sour, salty, bitter and umami—and how small additions like a pinch of sugar, a splash of vinegar, or a final grind of pepper can correct or elevate a dish.

The Power of Heat and Timing

The Maillard reaction—the browning that occurs when proteins and sugars meet heat—creates savory, caramelized notes that are essential to depth of flavor. Techniques that encourage browning, such as searing, roasting, and caramelizing, produce concentrated flavor compounds that form a compelling foundation.

Equally important is timing. Different cooking techniques extract different qualities from ingredients: sautéing brightens and softens, simmering melds flavors and rounds acidity, and roasting concentrates sweetness and adds crisp texture. Knowing when to add components matters: whole spices often toast early to release oils, while delicate herbs and citrus are usually added at the end to preserve freshness.

The Art of Contrast and Complement

Yente Van Eynde/Pexels

Great cooking balances contrasts. Textural contrast—crunch against creaminess, crisp edges against tender interiors—keeps each bite interesting and satisfying. Flavor contrast plays a similar role: sweet, acidic, bitter, and savory notes can balance or highlight one another. Acid cuts through richness, a touch of sweetness tames sharp acidity, and a bitter element can add complexity.

Temperature contrast also enhances enjoyment; hot and cold elements served together amplify perceived flavors. Simple examples include a warm stew finished with a cold fresh herb gremolata, or a warm cake paired with cool cream. Thoughtful contrasts make dishes feel complete and dynamic.

Herbs and Spices: The Flavor Enhancers

Herbs and spices extend the flavor spectrum of a dish. Fresh herbs deliver bright, volatile aromas best added near the end of cooking or as a finishing garnish. Dried herbs are more concentrated and benefit from longer cooking times to release their full character. Layering spices—adding some early to build a base and others later for lift—creates complexity without overwhelming the palate.

Regional ingredient patterns guide these choices: Mediterranean dishes often rely on basil, oregano and rosemary, while Southeast Asian cuisines use lemongrass, kaffir lime and galangal for aromatic brightness. Respecting these traditions while adjusting intensity and timing helps preserve balance.

Finishing Touches: Elevating the Dish

Finishing touches turn a good dish into a memorable one. Acids—lemon, vinegar, or a splash of wine—brighten flavors and lift heavy elements. A light squeeze of citrus over seafood or roasted vegetables can make flavors pop immediately. Fats—like a knob of butter, a swirl of olive oil, or a splash of cream—round and smooth flavors while adding a pleasing mouthfeel.

Garnishes provide both visual appeal and a final flavor note. Fresh herbs, toasted nuts, a sprinkle of coarse salt, or a tangy dollop of yogurt can provide contrast and clarity. Taste as you go and add final adjustments just before serving to ensure the dish reads as intended.

Layering flavor is both technique and intuition: start with strong fundamentals—aromatics, proper seasoning, and controlled heat—then refine through contrast, careful use of herbs and spices, and thoughtful finishing touches. With practice, these methods will become second nature and consistently produce balanced, flavorful results.

Why You’ll Love This Cocktail

Three ingredients, minimal effort, and a bright green pour make this drink ideal for celebrations or last-minute guests. The orange juice brings tropical brightness, while the blue liqueur transforms the color and the Jameson gives the drink a warm, approachable finish. If you prefer a more vivid green, a tiny drop of green food coloring will do the trick.

It’s a great option for anyone who likes fruity, easy-to-make cocktails that still feel special—perfect for St. Patrick’s Day gatherings or any time you want a cheerful, conversation-starting drink.

2 ounces Jameson Irish whiskey (or another Irish whiskey you prefer)

2 ounces blue curacao (or Hpnotiq)

4 ounces orange juice

Ice cubes

Ingredient Tips and Substitutions

You can substitute vodka for the Irish whiskey if you prefer a more traditional screwdriver flavor. The whiskey, however, adds a pleasant malt sweetness and an Irish twist.

Blue curacao is the standard blue liqueur. Hpnotiq is a fruitier alternative made from vodka and cognac that many people prefer. Midori or another melon liqueur can work if you want a different green-hued option.

Mix orange juice with pineapple, mango, or guava to create tropical variations and slightly alter the final color and sweetness.

For a fizzy version, use 2 ounces orange juice for color, then top each glass with orange-flavored sparkling water or club soda just before serving.

Garnishes are optional; orange slices and maraschino cherries are classic and attractive choices.

Recipe FAQs

What is an Irish Screwdriver?

An Irish Screwdriver, sometimes called the Drunken Leprechaun, is a variation of the classic screwdriver that swaps vodka for Irish whiskey and adds a blue liqueur to achieve a green color when mixed with orange juice. It’s typically served over ice with a simple garnish.

Can I customize the ingredients?

Yes. Swap different Irish whiskeys, use vodka for a more traditional taste, or choose other blue or green liqueurs like Hpnotiq or Midori. Try different juices for varied flavor profiles—pineapple, mango, or guava all work well.

What are the ideal ratios?

A reliable ratio is 1 part Irish whiskey, 1 part blue liqueur, and 2 parts orange juice. Adjust to make the drink stronger or milder to suit your preference.

Should the cocktail be served chilled?

Yes. Serve it chilled over ice for the best balance of flavor and refreshment.

Can I make a non-alcoholic version?

Yes. Use a non-alcoholic whiskey substitute or apple juice, and replace the blue liqueur with blue or green food coloring or a blue sports drink to achieve the green color.

Recipe Pro Tips

Glassware: Any clear glass works — highball, Collins, stemless wine glasses, or juice glasses all look great and showcase the color.

Color control: Add food coloring in very small amounts. One drop is usually enough to brighten the hue without affecting flavor.

Make ahead: For parties, mix the whiskey, blue liqueur, and orange juice in a pitcher and chill. Add ice and any sparkling water only when serving to retain fizz.

Storage and Serving Tips

Store a prepared batch in the refrigerator for up to 72 hours. Stir well before serving over fresh ice.

Do not add carbonated ingredients when storing; add sparkling water or soda just before serving for maximum fizz.

If scaling for a pitcher, test the color on a small sample because food coloring and liqueur can look different at larger volumes.

Final Thoughts

The Drunken Leprechaun (Irish Screwdriver) is a fun, easy cocktail that brings festive color and familiar citrus flavor to any celebration. With just three main ingredients and a few optional tweaks, you can tailor it to your taste and serve a cheerful, crowd-pleasing drink in minutes. Whether you stick to the classic ratios or try a tropical twist, this cocktail is simple enough for quick entertaining and special enough for holiday gatherings.

Katie’s tip

For other themed drinks, try experimenting with green-themed cocktails such as a shamrock-style margarita or a mint-forward martini. The green color makes many simple recipes feel festive.

Why You’ll Love Warm German Potato Salad

This recipe is often called both Bavarian potato salad and German potato salad. While Bavaria is a region in southeast Germany, the flavors—potatoes, bacon, onions and a vinegar-based dressing—are familiar across the country.

The combination of hot potato pieces and a warm bacon-and-vinegar dressing creates a comforting contrast in texture and flavor: silky potato flesh coated in a savory, slightly tangy sauce with crunchy bacon and fresh herbs. It’s a great alternative to mayonnaise-based American potato salad and is traditionally served warm or at room temperature.

Yukon Gold potatoes (about 3 pounds). Small to medium-sized potatoes work best; adjust cook time if using very small or very large potatoes.

Onion — red, sweet or yellow will work.

Bacon — chopped and cooked until crisp.

Green onions (scallions), divided into white/light-green and dark-green parts.

This version of cheeseburger soup combines ground beef, potatoes, and rich cheese into a creamy, satisfying bowl. Potatoes stretch the meat so a single pound of ground beef can feed more people, especially when served with a side or over pasta or noodles.

Leftovers are great reheated and can be extended by stirring in cooked wide noodles, rice, or toasted bread croutons. The recipe is flexible—adjust seasonings, cheese type, and dairy to taste.

Can You Use a Crockpot?

Yes. Brown the ground beef in a skillet and cook the onion until softened. Transfer the cooked meat and onion to the slow cooker with the potatoes, seasonings, and liquid. Cook on high for about 2–3 hours or on low until the potatoes are tender. Stir in the cream cheese and shredded cheddar near the end so the dairy melts smoothly. If you prefer a thicker soup, stir in a cornstarch slurry and cook a little longer to achieve the desired consistency.

For quicker weeknight cooking, the Instant Pot is faster, but the Crockpot is convenient if you want to set it and leave it for the day.

Making Homemade Croutons

Homemade croutons add a crunchy contrast to the creamy soup. Use leftover bread—cheesy or flavored loaves like jalapeño cheese bread make excellent croutons for extra flavor. Chill the bread to make slicing easier, cut into bite-sized cubes, and toast:

Air fryer: 5–7 minutes at medium heat, tossing halfway through.

Oven: Spread on a baking sheet and toast at 350°F for 3–6 minutes, tossing once.

Season with a bit of olive oil, salt, and garlic powder before toasting if desired.

What Cheese To Use

A block of sharp cheddar is recommended for the best melt and flavor. Freshly shredding a block of cheese gives a creamier result than pre-shredded cheese, which often contains anti-caking agents that can interfere with melting. For milder flavor, use medium cheddar; for a tangier bowl, choose sharp or extra-sharp cheddar. You can also blend cheeses—try mixing cheddar with Monterey Jack or a small amount of Parmesan for depth.

A box grater makes quick work of shredding a block of cheese.

More Soup Recipes

If you enjoy this cheeseburger soup, try other comforting soups such as tomato-based noodle soups, creamy gnocchi soup, Italian sausage chili, or green chile chicken soup. Soups are versatile and make excellent meal prep for busy weeks.

Instant Pot Cheeseburger Soup

A creamy, cheesy soup with ground beef and potatoes made in an Instant Pot for a quick, satisfying meal.

Prep Time: 5 minutes Cook Time: 45 minutes Finishing: 10 minutes Total Time: ~1 hour

Servings: 8

Ingredients

2 tablespoons Olive Oil

1 pound Ground Beef

1 medium Onion, chopped

1 teaspoon Better Than Bouillon (chicken or beef)

1 teaspoon Onion Powder

1 teaspoon Garlic Powder

1 teaspoon Salt

1 teaspoon Black Pepper

1 teaspoon Bragg Sprinkle Seasoning or other Italian seasoning

1 pound Potatoes (about 2 medium Russet), peeled and chopped into ½” pieces

3 cups Water

4 ounces Cream Cheese, softened and cut into pieces

2 cups Cheddar Cheese, shredded

½ cup Half and Half

1 tablespoon Cornstarch (optional)

1 tablespoon Water (for cornstarch slurry, optional)

Instructions

Set the Instant Pot to Sauté. Add olive oil and ground beef. Crumble and cook until nearly done, about 5–6 minutes. Drain excess fat, leaving about 2 tablespoons.

Add the chopped onion and sauté until fragrant and softened, about 3–5 minutes.

Stir in Better Than Bouillon, onion powder, garlic powder, Bragg seasoning, salt, and pepper. Heat for about a minute to incorporate the bouillon.

Cancel the Sauté function. Add the potatoes and 3 cups water to the pot.

Secure the lid and set the valve to Sealing. Cook on Manual/High pressure for 3 minutes, then allow a natural release. Total cook time including pressurizing and release will be about 25–30 minutes.

When the pressure has released, open the lid and return the pot to Sauté or keep it warm. Add cream cheese and stir until melted. Gradually add shredded cheddar, stirring constantly until fully incorporated. Stir in the half and half.

To thicken, whisk the cornstarch and 1 tablespoon water to make a slurry. Slowly stir it into the soup and cook for another 5–8 minutes until the soup reaches your desired thickness. Turn off the Instant Pot when finished.

Notes & Tips

Garnish bowls with chopped green onion and extra shredded cheddar. Croutons or toasted bread cubes add great texture. You can swap the bouillon paste for stock, powder, or a bouillon cube if you prefer.

Stovetop method: Follow the same steps in order in a large pot, simmering the potatoes until tender. Crockpot method: Brown beef and onion first, then combine with other ingredients (except dairy) and cook until potatoes are soft. Add dairy near the end.

Leftovers keep well in the refrigerator for a few days and reheat gently over low heat or in the microwave. To extend the soup, stir in cooked pasta, rice, or extra vegetables.

Why You’ll Love This Strawberry Rhubarb Pie

Sweet and tart: Fresh strawberries and rhubarb create a bright, balanced flavor.

Simple to prepare: Minimal prep and easy to assemble, great for beginner bakers.

Versatile: Serve warm with ice cream or chilled with whipped cream—both are excellent.

Ingredients You’ll Need

Double pie crust (homemade or store-bought)

5 cups fresh strawberries, hulled and sliced

2 stalks rhubarb, peeled and diced (about 2 cups)

3/4 cup packed brown sugar

1/2 cup granulated sugar

1/4 cup all-purpose flour (for filling)

2 tablespoons cornstarch

1/8 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

2 tablespoons butter, cubed

How to Make Strawberry Rhubarb Pie

Prep the Fruit Filling

Begin by combining the sliced strawberries and diced rhubarb in a large bowl. In a separate bowl, whisk together the brown sugar, granulated sugar, flour, cornstarch, salt, and cinnamon (if using). Pour the dry mixture over the fruit and gently toss until the berries and rhubarb are evenly coated. Let the mixture sit for a few minutes while you prepare the crust; this helps the sugars and thickeners begin to bind the juices.

Assemble the Pie

Place a nine-inch pie crust in a pie pan and chill for 10 minutes to firm up. Spoon the fruit filling into the crust and dot the top with small cubes of butter. For the crumb topping, mix 3 tablespoons flour, 1 tablespoon sugar, and 1/8 teaspoon salt. Cut in 1 tablespoon softened butter until the mixture forms coarse crumbs. Sprinkle the crumble evenly over the fruit.

Bake the pie at 400°F (200°C) for 50–60 minutes, or until the filling is bubbling and the top is golden brown. To prevent overflow, place a baking sheet on the rack below the pie. After baking, transfer the pie to a wire rack and cool for about 2 hours to let the filling set before slicing.

Tips for the Best Strawberry Rhubarb Pie

Brush the crust lightly with milk or an egg wash and sprinkle with sugar for a shiny, sweet finish.

Use fresh rhubarb for the best texture and brightness; frozen rhubarb can be used but should be thawed and drained first.

If the filling seems too wet, add an extra teaspoon of cornstarch; for a firmer filling, increase cornstarch to 3 tablespoons.

Place a baking sheet beneath the pie to catch any drips during baking.

Storage and Serving Suggestions

To serve: Enjoy warm with a scoop of vanilla ice cream or cool to room temperature and serve with whipped cream.

To store: Cover and refrigerate leftovers for up to 4 days.

To freeze: Wrap the cooled pie tightly and freeze up to 2 months. Thaw overnight in the refrigerator before serving.

Strawberry Rhubarb Pie Recipe FAQs

Can I use frozen strawberries and rhubarb?

Yes. Thaw and drain the fruit thoroughly to remove excess liquid, then proceed with the recipe. You may need slightly more thickening agent if the fruit releases much juice.

Can I use a different top crust?

Absolutely. Instead of a crumb topping you can use a full double crust, a lattice top, or a single top crust—adjust baking times as needed to achieve a golden finish.

How can I thicken the filling?

Cornstarch is a great choice for a clear, glossy filling. You can also use all-purpose flour or tapioca as alternatives; adjust quantities for the desired thickness.

More Dessert Recipes

If you enjoy this strawberry rhubarb pie, try other fruit-forward desserts like berry cheesecake salad, strawberry cheesecake cookies, or classic pumpkin bars with cream cheese frosting for seasonal variety.

Autumn is the season when warm baking spices take center stage. Cinnamon, cardamom, allspice, cloves and nutmeg combine to create a cozy, comforting aroma that makes baked goods feel like home. Inspired by a spice cake recipe from Cooks Illustrated, I adapted the batter to highlight fall flavors and added chopped apples and walnuts to create these Apple Walnut Cupcakes. Topped with a simple Vanilla Bean Buttercream and a sprinkle of chopped walnuts, these cupcakes capture the season and make great use of fresh apples.

The brown butter in this recipe adds depth and a toasty, nutty note that intensifies when the spices are added. As the cupcakes bake, your kitchen fills with the warm spice aroma that tempts you to try one right out of the oven. The ingredient list may look long, but each element contributes to texture and flavor—the crumb is tender, and the apples and walnuts add pleasant moisture and crunch. This batter is versatile; I used it as the base for pear & ginger cupcakes and pumpkin spice cupcakes as well. You can also experiment by adding caramel, pecans, or a mix of different baking apples.

For the frosting I kept things simple and convenient: a Vanilla Bean Buttercream. Instead of scraping a vanilla bean pod, I used vanilla paste, which combines the bean seeds with a concentrated vanilla extract and gives both flavor and visible specks of vanilla. Vanilla paste is widely available from specialty brands; my preferred brand is Nielsen Massey.

Apple Walnut Cupcakes
recipe adapted from Cooks Illustrated

2 1/4 cups unbleached all-purpose flour (11 1/4 ounces), plus extra for dusting pans
1 tablespoon ground cinnamon
3/4 teaspoon ground cardamom
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
16 tablespoons unsalted butter (2 sticks), softened
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
2 large eggs at room temperature
3 large egg yolks at room temperature
1 teaspoon vanilla extract
1 3/4 cups granulated sugar (12 1/4 ounces)
2 tablespoons light molasses or mild molasses
1 tablespoon grated fresh ginger
1 cup buttermilk, at room temperature
2 cups finely chopped Granny Smith apples
1 cup finely chopped walnuts

Adjust an oven rack to the middle position and heat the oven to 350 degrees F. Line two 12-cup muffin pans with paper liners. Combine the ground spices in a small bowl and set aside.

In an 8-inch skillet, heat 4 tablespoons of the butter over medium heat until melted, about 1 to 2 minutes. Continue cooking, swirling the pan, until the butter becomes light brown and releases a faint nutty aroma, 2 to 4 minutes. Add the spice mixture and cook, stirring constantly, for 15 seconds. Remove from the heat and let cool to room temperature, about 30 minutes.

Whisk the flour, baking powder, baking soda and salt together in a medium bowl. In a small bowl, gently whisk the eggs, yolks and vanilla until combined.

In the bowl of a stand mixer fitted with the paddle attachment, cream the remaining 12 tablespoons of butter with the granulated sugar and molasses at medium-high speed until pale and fluffy, about 3 minutes, scraping the bowl twice. Reduce the speed to medium and add the cooled brown butter and spice mixture, the grated ginger and half of the egg mixture; mix until combined, about 15 seconds. Add the remaining egg mixture and scrape the bowl.

Reduce the mixer to low and add about one-third of the flour mixture, then half of the buttermilk, mixing until just incorporated after each addition. Add half of the remaining flour and the rest of the buttermilk, then finish with the last of the flour. Mix at medium speed just until the batter is smooth, about 15 seconds; finish by folding once or twice with a rubber spatula to incorporate any pockets of flour. Fold in the chopped apples and walnuts until evenly distributed.

Divide the batter evenly among the prepared liners, filling each about two-thirds full. Bake for 20 to 22 minutes, rotating the pans once halfway through baking. Test for doneness with a toothpick; it should come out clean or with a few moist crumbs. Remove the cupcakes from the oven and cool completely on a wire rack before frosting.

Vanilla Bean Buttercream Frosting

recipe adapted from Cooks Illustrated

2½ sticks unsalted butter, softened
1 teaspoon vanilla paste
2½ cups confectioners’ sugar (10 ounces)
Pinch of salt
2 tablespoons heavy cream or half-and-half
1/4 cup chopped walnuts for garnish

In a stand mixer fitted with the whisk attachment, beat the softened butter at medium-high speed until smooth, about 20 seconds. Add the vanilla paste and beat briefly to combine.

Add the confectioners’ sugar and a pinch of salt; beat on medium-low until most of the sugar is moistened, about 1 minute. Scrape the bowl and beat at medium speed until the sugar is fully incorporated, about 30 seconds. Add the heavy cream or half-and-half, beat to combine, then increase the speed to medium-high and whip until the frosting is light and fluffy, about 3 to 4 minutes, scraping the bowl once or twice.

Fit a pastry bag with a star tip and pipe swirls of buttercream onto the cooled cupcakes. Garnish each cupcake with a sprinkle of chopped walnuts.

These Apple Walnut Cupcakes keep well in an airtight container in the refrigerator for several days; bring them to room temperature before serving for the best texture and flavor. The spice-forward cake pairs wonderfully with the smooth vanilla buttercream, and the apples add a bright, juicy contrast to the warm spices. Experiment with different apple varieties or swap walnuts for pecans to suit your taste.

These vivid green matcha pancakes elevate a simple stack of pancakes with bold flavor and a boost of antioxidants. I recently restocked my matcha powder after a trip to Japan and decided to pair the pancakes with leftover red bean ice cream — a classic and satisfying combination in Japanese cuisine.

A tall stack of pancakes is always comforting, but adding matcha to the batter brings a uniquely earthy, slightly bitter note that balances sweet toppings beautifully. These pancakes are straightforward to make: the method mirrors an ordinary pancake recipe, with matcha powder folded into the dry ingredients. They turn out tender, fragrantly green, and pair well with ice cream, chocolate, fresh berries, or toasted nuts. I like to serve mine with scoops of red bean ice cream and toasted almond slices for texture and contrast.

Tips for Fluffy Pancakes

Follow a few simple techniques to keep your pancakes light and fluffy instead of flat and chewy.

1. Do not overmix the batter

Baking powder creates tiny air bubbles that make pancakes rise. Overmixing deflates those bubbles and encourages gluten to develop, which produces dense, tough pancakes. For best results, combine wet and dry ingredients separately, then make a well in the dry mix and pour in the wet. Stir just until the ingredients are combined; the batter should be slightly thick and still a bit lumpy.

2. Rest the batter

Letting the batter rest for 15–20 minutes helps the flour fully hydrate and the gluten relax, which improves texture and creates lighter pancakes. If you’re short on time, allow at least 5 minutes. You can also make batter ahead and refrigerate it overnight; if you do, add a touch more baking powder before cooking since its effectiveness decreases over time.

3. Add sugar

A small amount of sugar softens the crumb by binding water in the batter and slowing gluten development. Sugar also helps the pancakes brown and form pleasant edges when cooked.

4. Flip gently

Wait until bubbles form and begin to break on the pancake surface before flipping. Turn pancakes carefully—an aggressive flip can burst air pockets and cause them to deflate.

How to Meal Plan to Save Money on Groceries

Learn a practical meal planning method with step-by-step instructions for beginners. As a family of six on one income, creating a monthly meal plan helps me stick to a budget. Whether you follow keto, want to lose weight, or simply want to stop asking “what’s for dinner?”, this approach will work. Use a printable meal plan template month after month to eat healthier, cut grocery costs, and regain sanity by always knowing what’s for dinner.

Have you ever gone grocery shopping ravenous and come home with far more than you needed? That feeling—buying on impulse—mirrors shopping without a plan.

Before I started planning, my cart was full of random items that sounded good in the moment. The result was predictable: over-budget spending, food wasted, and frustration.

A reliable meal planner has changed that. It has saved time, reduced waste, and trimmed our grocery bill.

How meal planning has simplified life

I save time—no frantic decisions at dinner time when I’m tired or distracted.

I waste less food because I plan to use all the ingredients I buy, even things like cabbage.

Less waste naturally means I save money. Planning a whole month at a time increases those savings: you plan once and know what the family will eat for four weeks.

Planning monthly frees up headspace and lowers grocery costs. I plan less often but with better results.

Before you begin: a few essentials

Grab a free meal plan template

Print a template you like

You’ll be looking at your plan every day for four weeks, so choose a printable template you enjoy. Fill in the dates and keep the sheet visible on the fridge or in your planning area. A clear, attractive layout makes it easier to stick with the habit.

List family favorite meals

Create a rotation of meals your family loves. On your template, keep a section for favorite recipes and note the three ingredients that spoil fastest. This speeds up future planning and prevents last-minute scrambles.

Set the mood

Make planning a pleasant routine: grab a drink, play music, and choose a quiet time—after the kids are in bed works well. Treat it like a short, satisfying appointment with yourself.

Gather supplies

Have your shopping list, favorite pens, a pencil for flexibility, and a weather forecast handy. Whether you use paper or an app for the shopping list, keep it beside you while you plan. Use a pencil on the meal calendar so you can easily move meals around as plans change.

Now you’re ready to start planning.

The basic steps to become a meal-planning pro

1. Mark calendar factors in pencil

Will you be out of town? Consider making a couple of freezer meals before you go.

Which nights are rushed? Those can be slow cooker or instant-pot nights.

Are guests coming? Plan meals that are easy to multiply and cost-effective.

Check the weather: hot evenings may call for grilled meals, cold nights for soups or stews.

2. Use regular meals to streamline planning

Create a weekly rhythm—Taco Tuesday, Meatless Monday, Stir-Fry Thursday, and so on. Establishing themes reduces decision fatigue and makes shopping predictable.

Meatless Monday

Instant Pot or one-pot nights

Taco Tuesday

Stir-fry or vegetable-forward meals

Rotate easy dinners for long days: pizza, pasta, nachos, or breakfast for dinner

Note days you’ll eat out and fill those in first so you aren’t planning unnecessary meals.

Having meals on a regular rotation streamlines your menu planning.

3. Shop your kitchen first

Look at what you already have and let those items guide the plan. Use what’s on hand, especially things you bought on sale. After your plan is set, then watch coupons and deals for the specific ingredients you need—don’t let deals drive your menu.

Tip: Once your meal plan is set, it guides your coupon search—not the other way around. That prevents impulse purchases of “deals” you won’t actually use.

Related post: How to Keep Vegetables Fresh as Long as Possible

The next step looks long but is straightforward—follow the pattern and it becomes second nature.

4. Fill in the plan using a “cornerstone meal” pattern

Pick a meal you love (a cornerstone meal) and write it on the plan.

Identify ingredients that will be left over and spoil quickly.

Plan subsequent meals that use those leftover ingredients within a few days.

Example: If chicken pot pie is your cornerstone, you may have leftover raw chicken and celery. Schedule a stir-fry or chicken soup a couple of days later to use that chicken and celery before they spoil.

Write down your cornerstone meal

Add a second meal that uses the same perishable ingredients

5. Add ingredients to your shopping list as you plan

Use whatever shopping-list tool works for you—an app or paper. Keep the grocery list separate from your meal calendar so the planner stays clean and readable. Sync lists with family members if possible so everyone can add items and check them off while shopping.

Repeat this process for other meal times

I usually plan breakfast and dinner. Lunches and snacks are simpler staples I rotate through; I add necessary ingredients to the shopping list. If it helps, create a visible checklist for breakfasts, lunches, and snacks so nothing is forgotten.

With a monthly plan, you’ll quickly feel the relief of knowing what’s for dinner each night and stop shopping on impulse.

Extra tips

Swap meals if your appetite changes, but try to swap with a meal that uses the same ingredients to avoid waste.

Review your plan each evening so you’re prepared and don’t forget to thaw or prep key ingredients.

If you use a shopping app, consider adding the store name before the item so items can be grouped by store when you sort your list.

I hope these tips help make meal planning easier and more effective. Do you have a method that works for you? I’d love to hear your ideas.
