I find thawing in short bursts in the microwave or in the refrigerator works well, depending on how much time I have. Once thawed, cut the sheets into squares, press them into a greased mini muffin tin, fill with the spinach dip, and bake until golden.

Ingredients
- 1 package Schar Gluten Free Puff Pastry Dough (or your preferred gluten free puff pastry)
- 1 Tablespoon butter
- 1 (10 ounce) package frozen spinach, thawed and drained
- 3 teaspoons minced garlic
- 1/4 teaspoon nutmeg
- 1/4 teaspoon black pepper
- 8 ounces cream cheese
- 2 Tablespoons mayonnaise
- 2 Tablespoons sour cream
- 1/4 cup Parmesan, plus extra for sprinkling
- 1 cup shredded mozzarella cheese
- 1 beaten egg for brushing pastry
Instructions
- Preheat the oven to 400°F (205°C).
- Defrost the puff pastry and cut each sheet into 12 squares.
- Grease a mini muffin tin with oil or nonstick spray.
- Press each puff pastry square into a muffin cup to form a little shell.
- Melt the butter in a saucepan over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the drained spinach, nutmeg, and black pepper. Sauté for 3–5 minutes until heated through.
