How to make homemade fruit popsicles from scratch?

  1. Prepare the mixture– Add the fruit, yogurt, juice, and honey to a blender and blend until smooth.
  2. Pour into molds– Divide the mixture evenly between popsicle molds, then add the lids or popsicle sticks.
  3. Freeze– Freeze until completely firm. Overnight freezing gives the best texture.
  4. Remove from molds– Run the outside of the mold under warm water for a few seconds, then gently pull out the popsicles.

Can you make healthy popsicles without mold?

Yes. You do not need special popsicle molds to make healthy homemade fruit popsicles. Small plastic drinking cups, paper cups, ice cube trays, or even a cupcake pan can work well. Pour the blended mixture into your chosen container, place a popsicle stick or small spoon in the center, and freeze until solid. If the stick will not stand upright right away, freeze the mixture for a short time until it becomes slightly slushy, then add the stick and continue freezing.

This method is especially useful if you want to make mini popsicles for kids or small frozen fruit bites for a quick snack. Ice cube trays are also a good option if you want to add frozen fruit cubes to drinks or smoothies later.

Variations for fresh or real fruit smoothie popsicles

Try different molds– Popsicle molds come in many shapes and sizes, from classic bars to smaller toddler-friendly molds. The mold size will affect the number of servings and freezing time.

Add fruit pieces or chunks– Stir in small pieces of raspberries, blueberries, blackberries, diced strawberries, pineapple, peaches, mangoes, or kiwi before freezing. Keep the pieces small so the popsicles are easy to eat.

Make them creamy– For creamy fruit popsicles, use full-fat yogurt, Greek yogurt, or coconut milk. Pureed bananas also add a naturally smooth and creamy texture.

Add vegetable juices– A small amount of vegetable juice can be blended into the mixture for extra flavor and color. Choose juices that pair well with fruit so the popsicles still taste sweet and refreshing.

Make smoothie popsicles– Leftover smoothies can be poured directly into popsicle molds and frozen for later. This is a simple way to reduce waste and turn a smoothie into a healthy frozen treat.

Add acidity– A squeeze of lemon juice, lime juice, grapefruit juice, pomegranate juice, or orange juice can brighten the flavor and balance the sweetness of the fruit.

Try other sweeteners– Honey works well, but maple syrup, agave syrup, granulated sugar, brown sugar, or molasses can also be used, depending on the flavor you want.

Skip the sweetener– Some fruits are naturally sweet enough on their own. Bananas, mangoes, ripe peaches, and sweet berries may not need any additional sweetener.

Use flavored yogurt– Vanilla yogurt or fruit-flavored yogurt can add extra sweetness and flavor. If using sweetened yogurt, taste the mixture before adding honey.

Add extracts– A small splash of vanilla extract can enhance the overall flavor. Use extracts sparingly so they do not overpower the fruit.

Tips and Techniques for frozen fruit bars

Freezing time may vary– Most popsicles need about 4-6 hours to freeze, but overnight is best for a firm texture. Mixtures with fruit chunks may take longer than smooth juice-based mixtures.

Servings will vary– The number of popsicles depends on the size of your molds. Larger molds will make fewer popsicles, while smaller molds will make more.

Use unsweetened full-fat yogurt– Greek yogurt is a great choice because it is thick, rich, and creamy. Full-fat yogurt helps create a smoother texture and keeps the popsicles from tasting icy.

Use unsweetened juices– Unsweetened apple juice, orange juice, pineapple juice, cranberry juice, lemonade, green juice, or coconut water can all be used. Unsweetened juice helps you control the final sweetness.

Fresh fruit vs. frozen fruit– Both fresh and frozen fruit work well. Frozen fruit usually creates a thicker mixture, while fresh fruit blends into a lighter texture.

Taste before freezing– Frozen foods taste slightly less sweet than they do before freezing, so taste the mixture before pouring it into the molds. Add a little more honey or juice if needed.

Blend until smooth– A smooth mixture freezes more evenly and creates a better popsicle texture. If you prefer a chunkier fruit bar, blend most of the mixture first, then stir in chopped fruit at the end.
