Who doesn’t love a good chocolate cupcake?

Ingredients

  • For the Cupcakes
  • ½ cup butter, softened (110g)
  • 1 cup caster sugar (200g)
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup cocoa (50g)
  • 1 cup boiling water (250mL)
  • 1 ⅓ cups all-purpose flour (194g)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 pinch salt
  • For the Frosting
  • 2 cups icing sugar (250g)
  • 20g butter, softened
  • ¼ cup cocoa (25g)
  • 2 tablespoons cream or milk

Instructions

  • For the Cupcakes
  • Preheat the oven to 180°C (375°F) and line a 12-piece muffin tray with cupcake cases.
  • Mix the cocoa and boiling water together until the cocoa has dissolved. Place the mixture in the fridge to cool.
  • Cream the softened butter and caster sugar together until combined.
  • Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, mix the flour, baking soda, baking powder, and salt together.
  • With the mixer running, add one third of the flour mixture to the butter mixture, then add one third of the cooled cocoa mixture. Continue alternating between the two, beginning and ending with the flour mixture. Stir in the vanilla extract.
  • Spoon the batter evenly into the cupcake cases. Bake for 15 minutes, or until a skewer inserted into the centre comes out clean and the cupcakes feel soft to the touch.
  • Transfer the cupcakes to a tray and allow them to cool completely before frosting.
  • For the Chocolate Frosting
  • Beat the softened butter until creamy.
  • Add the cocoa and cream or milk, then beat until combined.
  • Slowly add the icing sugar while beating. If the frosting is too stiff, add a little more cream or milk until it reaches the right consistency.
