How this recipe started
I first developed this dish the night after a long move into a new apartment. With limited groceries on hand and stores closed, I pulled together what I had — potatoes, peppers, onions, and a package of sweet Italian sausage — and improvised. The result was a comforting baked casserole that smelled amazing before it even finished cooking. It’s a simple idea born out of necessity that turned into a favorite.

Description
A one-dish baked casserole of sweet Italian sausage, seasoned potatoes, onions, and bell peppers. It’s hearty, easy to scale, and forgiving — perfect for busy weeknights or a weekend meal.
Ingredients
- 2 lbs ground sweet Italian sausage
- 2 lbs russet potatoes
- 1 cup onions, coarsely chopped
- 1 cup green bell pepper, coarsely chopped
- 1 cup red bell pepper, coarsely chopped
- 1/4 cup water
- 1 tbsp olive oil
- 2 tsp salt (adjust to taste)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp Italian seasoning
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional, for heat)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel the potatoes, then slice and dice them into even-sized cubes so they cook uniformly.
- Slice the onions and bell peppers and chop into bite-sized pieces.
- Portion the sausage and press or knead it into small rectangular or bite-size pieces so it cooks evenly with the potatoes.
- Place the potatoes, onions, peppers, and sausage in a large casserole dish or baking pan.
- Sprinkle the salt, garlic powder, onion powder, Italian seasoning, black pepper, and red pepper flakes over the ingredients. Toss gently to distribute the seasonings evenly.
- Drizzle the olive oil over the mixture and pour in 1/4 cup of water to help steam and tenderize the potatoes while baking.
- Cover the dish with aluminum foil and bake for about 60 minutes, or until the potatoes are tender when pierced with a fork.
- Remove the foil and bake an additional 15–20 minutes, or until the sausage is browned and the potatoes have a light golden crust. If desired, broil briefly for extra color—watch closely to avoid burning.
- Let the casserole rest for 5 minutes before serving to allow the juices to settle.
Nutrition
- Serving size: Serves 6
- Nutrition will vary by brands and exact quantities used. For a lighter version, swap half the potatoes for sweet potatoes or reduce the sausage quantity and add extra vegetables.
Tips and variations
- For a crispier finish, remove the foil for the last 20 minutes and increase oven temperature to 400°F for that final browning step.
- Mix in sliced mushrooms or zucchini for added vegetables and volume.
- Use hot Italian sausage if you prefer more heat, or turkey Italian sausage for a leaner option.
- If you want a creamier texture, stir in a splash of chicken broth or a couple tablespoons of cream before the final bake.
