  • 2–3 green onions, chopped
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • 1/2 cup grated mozzarella (or other melting cheese)

Instructions

  1. Preheat the waffle iron so it’s hot and ready.
  2. Mix the grated kohlrabi, chopped green onions, and beaten eggs in a bowl. Season with salt and pepper.
  3. When the waffle iron is hot, sprinkle about 1/4 cup of grated cheese onto the surface to create a cheese base.
  4. Spread the kohlrabi and egg mixture evenly over the cheese layer.
  5. Top with the remaining cheese to form a crisp outer crust.
  6. Close the waffle iron and cook for about 5 minutes, or until the edges are golden and the cheese is crisp.
