Low Carb Air Fryer Meatloaf (Man-Pleasing, THM S)

My husband adores this man-pleasing meatloaf. It’s one of my go-to air fryer recipes while following the Trim Healthy Mama plan. Even my grandchildren light up when I serve this with mashed cauliflower or roasted turnips.

Air Fryer Man Pleasing Meatloaf (THM S, Low Carb)

Meatloaf is timeless comfort food: budget-friendly, filling, and packed with memories of family meals. Converting a classic meatloaf into an air fryer version that fits the Trim Healthy Mama approach has allowed us to enjoy a favorite without added sugar or off-plan ingredients.

I often use homemade, no-sugar ketchup in this recipe, but you can choose a store-bought no-sugar-added ketchup or prepare a catsup recipe from the Trim Healthy Mama cookbook. I also like THM Baking Blend as a binder here; when I’m low on that, I substitute my own Mama’s Bake & Fry Mix with good results.

The Best Ingredients To Use When Making Man Pleasing Meatloaf

Choosing quality ingredients makes a big difference. I prefer a mix of lean ground beef and ground turkey for a nice balance of flavor and moisture. Fresh onion and garlic add depth, while egg yolks and a small amount of a gluten-free baking blend help bind the loaf without added carbs. The glaze brings the classic sweet-savory finish — use a no-sugar ketchup base and a touch of balsamic to round it out.

Adding Extra Vegetables

You can fold extra vegetables into the meat mixture to boost nutrition and flavor without changing the texture much. Some good options:

  • 1/2 cup finely shredded carrots
  • 1/2 cup finely shredded zucchini (squeeze excess moisture)
  • 1/2 cup chopped mushrooms

About The Air Fryers I Use

I started with a small drawer-style air fryer which worked well for a long time, then upgraded to a larger oven-style air fryer that lives on my counter. Both types cook beautifully, but there are a few differences in technique, especially when it comes to handling grease and preventing smoke.

The Difference in Collecting Grease

Drawer-style air fryers: Add about 1/4 inch of water to the bottom of the drawer before inserting the basket. This helps prevent smoking by catching drips and keeping fat from burning on the hot metal.

Oven-style air fryers: There isn’t a built-in reservoir for water, so place a small ovenproof pan or a deeper tray lined with foil underneath the rack to act as a drip tray. Adding a little water to that pan will also reduce smoke.

Using a Pan vs the Racks to Cook Man Pleasing Meatloaf

Cooking the meatloaf in a pan will work, but it can trap fat and produce a softer, slightly soggy exterior. Cooking on a rack or in the air fryer basket encourages air circulation, producing a firmer texture and a pleasing crust similar to traditional oven-baked meatloaf.

A family-friendly, low-carb meatloaf cooked in the air fryer with a tangy glaze.
Ingredients
  • 1 pound ground turkey
  • 1 pound lean ground beef
  • 1 cup onion, diced
  • 1 teaspoon fresh garlic, minced
  • 2 egg yolks, lightly beaten
  • 1/2 cup no-sugar ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup THM Baking Blend (or Mama’s Bake & Fry Mix)
  • 2 teaspoons THM Mineral Salt (or salt to taste)
  • Black pepper to taste
  • For the Glaze
  • 6 tablespoons no-sugar ketchup
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons brown sugar substitute
Instructions
  1. In a large bowl, combine the ground turkey, ground beef, diced onion, minced garlic, egg yolks, 1/2 cup ketchup, baking blend, and salt. Season with black pepper and mix well until evenly combined.
  2. Preheat your air fryer to 350°F (175°C). See notes below for techniques to avoid smoking.
  3. Shape the meat mixture into a loaf. For a drawer-style air fryer, pack the loaf into the basket leaving a 1/2-inch gap around the edges for airflow. For an oven-style air fryer, form the loaf on a rack and place a small pan with water under the rack to catch drips.
  4. Air fry at 350°F for 20 minutes. Carefully turn the loaf over using a spatula or tongs, reshape gently if needed, and continue cooking.
  5. Air fry for another 20 minutes, then check the internal temperature.
For the Glaze:
  1. Whisk together 6 tablespoons ketchup, balsamic vinegar, and brown sugar substitute. Spread evenly over the meatloaf.
  2. Return the meatloaf to the air fryer for an additional 5–10 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is set.
  3. Allow the meatloaf to rest for 5 minutes before slicing. This helps the juices redistribute and makes it easier to serve.
