
These Lime Jello Parfaits are bright, light, and refreshing—great as a simple dessert or a colorful side for a party table. The vivid green Jello layered with creamy Cool Whip creates an attractive contrast that makes a striking presentation for St. Patrick’s Day or any celebration that features green in its color palette.
They’re remarkably easy to prepare. Aside from chilling time while the Jello sets, the active work takes only a few minutes, making this an ideal recipe when you want a tasty, low-effort dessert with big visual impact.
If lime isn’t your first choice, feel free to substitute any Jello flavor to match your taste or event color scheme. Fruit can also be added—sliced strawberries, raspberries, or mandarin oranges work well for texture and extra flavor. I’ve made a batch using strawberry Jello with sliced strawberries mixed in and as a garnish for a different color and flavor profile.
The basic ingredients are simple: one package of Jello (lime or your preferred flavor), an 8-ounce container of Cool Whip, and clear plastic cups (3–5 ounce) for individual parfaits. A lime wedge or colored sprinkles are optional for garnish. These supplies are easy to find at grocery or party stores.

To prepare: make the Jello according to package directions and refrigerate until the mixture begins to thicken, about 15–20 minutes. Before pouring the Jello into cups, reserve approximately 1/3 cup of the liquid Jello to mix later with Cool Whip for the creamy layer.
Spoon the slightly cooled Jello into clear cups and place the cups at an angle (a muffin tin works well for this) so the Jello sets with a slanted edge—this creates a fun layered look. Chill until fully set, typically 3–4 hours.

While the cups are setting, fold about 1 cup of Cool Whip into the reserved 1/3 cup of liquid Jello until smooth. Cover and refrigerate this mixture so it remains chilled and holds its light texture when added to the set Jello cups. This whipped Jello layer offers a soft, creamy contrast to the firm jelly.

After the Jello has fully set, spoon the Cool Whip-Jello mixture into each cup, and finish with a small dollop of plain Cool Whip on top.

For garnish, add a small lime wedge, a bit of lime zest, or a sprinkle of colored sprinkles to personalize the look. These little details make the parfaits feel finished and festive.
