Description

A one-dish baked casserole of sweet Italian sausage, seasoned potatoes, onions, and bell peppers. It’s hearty, easy to scale, and forgiving — perfect for busy weeknights or a weekend meal.


Ingredients

  • 2 lbs ground sweet Italian sausage
  • 2 lbs russet potatoes
  • 1 cup onions, coarsely chopped
  • 1 cup green bell pepper, coarsely chopped

  • 1 tbsp olive oil
  • 2 tsp salt (adjust to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel the potatoes, then slice and dice them into even-sized cubes so they cook uniformly.
  3. Slice the onions and bell peppers and chop into bite-sized pieces.
  4. Portion the sausage and press or knead it into small rectangular or bite-size pieces so it cooks evenly with the potatoes.
  5. Place the potatoes, onions, peppers, and sausage in a large casserole dish or baking pan.
  6. Sprinkle the salt, garlic powder, onion powder, Italian seasoning, black pepper, and red pepper flakes over the ingredients. Toss gently to distribute the seasonings evenly.
